A large employer was faced with an interesting challenge. While providing a complete campus foodservice program supplied by a leading international operator, team members were regularly leaving to have lunch at their favorite local restaurants. The challenge was issued: Bring the restaurants to us!
Batali was the operations expert on a development team charged with creating a new foodservice model. The job included designing the facility, recruiting vendors, and creating the systems and management tools to allow this diverse group of operators to all thrive under one roof.
This multi-year project included partnerships with architects and engineers to create a unique space built for high-volume and fast service, while providing a comfortable respite for workers to relax and refresh.
Employees were queried to determine their favorite local restaurants serving a variety of traditional and ethnic cuisines. These restaurant owners were then approached with this unique opportunity. A low entry lease was confirmed with each operator and a highly publicized opening celebration was enormously successful.
